Quick Cranberry Sauce

Cranberry sauce doesn’t have to be cooked to be delicious!

My mom made a cooked version of this every year, and I always loved it. However, cooked cranberry sauce typically uses a lot of white sugar. So I wanted to create a healthy version that would be just as tasty.

It’s very pretty with all the colors, and it’s easy to make. You can make it as sweet as you like by adding more or less dried fruit and/or grapes.

I found the idea to add fresh grapes from the lovely raw food chef Brigitte Mars.

Mine is pictured here with some of my Mushroom Gravy.

Makes 4 cups/920ml of sauce, to serve 8 or more as a sauce to top a nut loaf, or as an accompaniment to ‘burgers’, ‘rice’ or other dishes.

Quick Cranberry Sauce recipe

You will need:

A food processor or the chopper attachment of your hand blender

Ingredients

  • 2 ½ cups/400g thawed frozen cranberries
  • ½ cup/100g dried apricots, soaked at least 20 minutes in warm water (or overnight)
  • 2 oranges, peeled, deseeded and cut in quarters (you may want to grate some peel first, see tips)
  • 1 big handful of grapes
  • ½ cup/120ml maple syrup, honey, xylitol or other sweetener

How you do it

Mix everything in the food processor, and check the consistency. That’s it!

Serve your Cranberry Sauce accompanied by some of my Light Nut Loaf on a bed of salad leaves or chopped fresh veggies (if desired), accompanied by my Mushroom Gravy.

Rocking Raw Chef tips

  • Any leftover Cranberry Sauce will keep in the refrigerator for at least a week.
  • You don’t have to use oranges. You can substitute some chopped pineapple, tangerines, satsumas…or just use the cranberries and grapes.
  • I like to top my cranberry sauce with some grated orange peel. If you do this, be sure to grate the peel before cutting your orange in quarters. Much easier!
