Here it is…a raw apple crumble recipe, as well as a raw vanilla mango custard recipe. Yum!
I was so excited when I came up with this delicious raw version of one of my favorite desserts.
Makes about 12 portions.
For the filling
Process in a food processor and pour into a glass dish:
4 cored apples, roughly chopped
1 cored pear, roughly chopped
2 ripe bananas, roughly chopped
1/3 cup maple syrup or xylitol
¾ cup raisins or sultanas
1 teaspoon lemon juice
½ tablespoon cinnamon
For the crumble topping
1 cup ground flax seeds
½ cup finely chopped nuts, or previously soaked oat groats (soak for about 8 hours)
½ teaspoon cinnamon
2-3 tablespoons maple syrup (to taste)
Pinch salt
Use a coffee grinder to grind the flax seeds. Mix all ingredients together in a glass bowl, adding the sweetener last. Stir well. It should be a bit lumpy, like a crumble. Taste test for sweetness and add more maple syrup if desired.
For the custard
Combine the following in a high-speed blender:
1 cup/240ml almond milk (you can get the recipe here)
1 ripe mango
1 teaspoon vanilla extract, or 1/2 teaspoon vanilla powder
1 tablespoon maple syrup, honey or xylitol
½ teaspoon lemon juice
2 teaspoons mesquite meal (optional, but this superfood adds a delicious caramel taste!)
A pinch of salt
Rocking Raw Chef Tips
For the topping you can also add dried fruit, for example sultanas or raisins, blueberries, cranberries, cherries, dried peaches…anything you fancy.
Granola makes a good topping too.
In the above photo I’ve topped the crumble with fresh blueberries.
Plus it’s so healthy you can have it for breakfast.
