I found a new favourite for me when I was wondering what to do with watermelon.
Make watermelon cubes!
The idea came to me when, having just carved a huge watermelon, and having eaten huge chunks of the inside, I realized that there was still… loads… of… watermelon (sigh)
I didn’t want it to go to waste, but there was only so much watermelon I could eat in one sitting!
How you do it
I put some chunks in my blender and pushed the button.
It made an instant smoothie, which is delicious by the way, as watermelons are almost all water. No need to add anything else!
I drank some of the smoothie in the evening and thought, perfect! All done!
Then I saw – uh-oh – that there was still another whole watermelon to eat.
Arrrghhh! I had forgotten about the inside of the one my son had carved!
So we blended that one too.
Being full of smoothie at this point (and wanting to get back to the movie, if I’m honest), we poured it into ice cube trays and put them in the freezer, thinking we could defrost them on another day.
Sure enough, a few days later I popped a few cubes into a glass and let them defrost, and they defrosted just in time for me to enjoy in front of another movie with the family (yes we are serious movie fans!)
As the watermelon hadn’t quite defrosted completely, I could enjoy it slowly, munching bits of cubes as well as drinking the sweet juice.
Perfect!
What to do with watermelon in the summer
Watermelon smoothies make great popsicles too!
Just pour the smoothie into your popsicle molds, and freeze. They’re delicious!
